COURAGEOUS Movie Trailer

I am really excited about this movie! It will be released into theaters on Septemper 30th, 2011.
We thought of driving to see it but the Lord opened a door for me to work with a group to get it to come to a theater in my area. This was something I never thought of doing but it has been a great experience.
Together we needed at least 1000 ticket sales in order for Sony to bring it to our local theater.

We were looking for commitments for ticket sales for the movie. I sent out e-mails and told friends. My mom sent e-mails too. We thought we could get 50 tickets. When we got that many pretty easily we kept spreading the word about Courageous and we thought maybe we could get 100. That would be about 1/10 of what is needed. We did it! Presently we have 136 commitments for tickets! We reached the 1000 and now we get to see this in our local theater and have a movie with such a wonderful Christian message for families in my town!
If you have the opportunity to see this movie, I highly recommend it!

Cheesecake-Stuffed Peaches

I really like to cook and bake and my mom has been teaching me a lot of new recipes. Here is one we tried the other night and it was very good. I thought I'd share with my friends here!

Cheesecake-Stuffed Baked Peaches:
We made them with fresh peaches! I imagine you could used canned peaches in the off season.

6 peaches, washed, halved and pitted
1/4 cup butter, melted
3 Tbsp. cinnamon-sugar
1/2 of an 8 oz. pkg. cream cheese, softened
1/4 cup sugar (we used a little less)
1 egg yolk
1 1/2 tsp. vanilla

*Preheat oven to 350 degrees. Line a 15x10x1 inch baking pan with parchment paper, set aside. Trim a very thin slice from the round side of each peach half so the halves will sit steady on pan. Dip each peach half in melted butter to coat top. Arrange them on prepared pan. Sprinkle tops of peaches with cinnamon-sugar; set aside. (You can purchase a cinnamon-sugar mixture or combine 3 Tbsp. sugar with 1 tsp. ground cinnamon.)

In a medium bowl, beat cream cheese with a mixer on medium speed until smooth. Add sugar, egg yolk, and vanilla. Beat until combined. Spoon cream cheese mixture into peach centers. Bake, uncovered, about 30 minutes or until lightly browned and softened. Serve warm, at room temperature, or chilled. We liked ours warm!
Makes 6 servings (2 peach halves per serving.)
